Ingredients

2 cups cooked shredded chicken (using rotisserie chicken is recommended for convenience)

1 cup shredded cheese (choose between cheddar or a Mexican cheese blend)

1/2 cup cream cheese, softened to room temperature

1/4 cup chopped fresh cilantro (optional, for added freshness)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon taco seasoning

1 package (10-12 count) small flour tortillas or corn tortillas

Olive oil spray or cooking spray

Salsa and sour cream for dipping

Instructions

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, shredded cheese, softened cream cheese, chopped cilantro (if using), garlic powder, onion powder, and taco seasoning. Use a spatula or spoon to mix until all ingredients are well combined and evenly distributed.

Assemble the Taquitos: Take a tortilla and lay it flat on a clean surface. Spoon a generous tablespoon of the chicken mixture along one edge of the tortilla. Carefully roll the tortilla tightly around the filling, tucking in the ends as you go to secure the filling. If you are using corn tortillas, lightly warm them in a dry skillet or microwave for a few seconds to make them more pliable before rolling.

Secure the Taquitos: Place the rolled taquitos seam-side down on a plate or cutting board to help maintain their shape. Continue this process with the remaining tortillas and filling until everything is rolled up.

Preheat the Air Fryer: Set your air fryer to preheat at 375°F (190°C) for about 5 minutes while you finish assembling the taquitos.

Air Fry the Taquitos: Lightly coat the taquitos with olive oil spray to encourage crispiness. Arrange them in a single layer in the air fryer basket, ensuring there’s enough space between each taquito for optimal air circulation. You may need to work in batches based on the size of your air fryer. Air fry the taquitos for 8-10 minutes or until they achieve a golden brown and crispy exterior. Remember to shake the basket halfway through cooking to promote even browning.

Serve: Once the taquitos are cooked to perfection, carefully remove them from the air fryer. Serve them hot with bowls of salsa and sour cream on the side for delicious dipping options.
