Baked Apple Cinnamon French Toast Cups

1 large apple (such as Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon butter

1 teaspoon cinnamon, divided

1 tablespoon brown sugar

6 slices of thick bread (like brioche or challah), cut into 1-inch cubes

4 large eggs

1 cup milk (whole or any preferred alternative)

2 tablespoons maple syrup

1 teaspoon vanilla extract

A pinch of salt

Powdered sugar for dusting (optional)

Chopped pecans or walnuts for topping (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease each cup of a muffin pan generously with non-stick spray or butter to ensure easy removal later.

    Sauté the Apples: In a medium skillet set over medium heat, melt the butter. Once melted, add the diced apple, 1/2 teaspoon of cinnamon, and brown sugar. Stir occasionally and cook for about 5-7 minutes until the apples are tender and lightly caramelized. Once done, remove from heat and set aside to cool slightly.

      Prepare the Bread Cubes: In a large mixing bowl, combine the cubed bread with the sautéed apples. Gently toss them together to ensure that the bread is evenly coated with the apple mixture.

        Make the Custard: In a separate bowl, whisk together the eggs, milk, maple syrup, the remaining 1/2 teaspoon of cinnamon, vanilla extract, and a pinch of salt until fully combined and frothy.
