2 large russet potatoes

1 medium head of cauliflower, cut into florets

1 cup buffalo sauce (store-bought or homemade)

1 tablespoon olive oil

1 tablespoon garlic powder

1 teaspoon smoked paprika

1 cup shredded cheddar cheese (or dairy-free alternative)

½ cup Greek yogurt or sour cream (or dairy-free alternative)

¼ cup chopped green onions

Carefully scrub the russet potatoes under running water to remove any dirt, then pierce each potato several times with a fork to allow steam to escape. Place the potatoes directly on the middle oven rack and bake for about 45-60 minutes. They are done when easily pierced with a fork and feel soft to the touch.

    Prepare the Cauliflower: While the potatoes are baking, rinse and cut the cauliflower into small, uniform florets. In a large mixing bowl, combine the cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until all pieces are evenly coated with the seasoning.
