Buffalo Chicken Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups cooked shredded chicken (rotisserie chicken works perfectly)

1/2 cup buffalo sauce (adjust based on desired heat level)

1/2 cup cream cheese, softened to room temperature

1/2 cup shredded cheddar cheese

1/4 cup Greek yogurt or sour cream

1/4 cup chopped green onions (reserve some for garnish)

Salt and black pepper to taste

    Prepare the Sweet Potatoes: Rinse the sweet potatoes under cold water and scrub them clean. Poke multiple holes in each sweet potato using a fork to allow steam to escape. Wrap each potato individually in aluminum foil and place them on a baking sheet. Bake for 45-60 minutes, or until they are soft when pierced with a fork.

      Make the Chicken Mixture: While the sweet potatoes are baking, prepare the filling. In a medium mixing bowl, combine the cooked shredded chicken with the buffalo sauce and softened cream cheese. Mix well until the chicken is evenly coated.
