1 lb jumbo shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1 lime, juiced

For the Pineapple Rice:

1 cup jasmine rice

2 cups coconut milk (or water, if preferred)

1 cup fresh pineapple, diced into small pieces

1/2 red bell pepper, finely chopped

1/4 cup green onions, thinly sliced

1 tablespoon soy sauce

Salt to taste

Fresh cilantro for garnish (optional)

Marinate the Shrimp:

    In a large mixing bowl, whisk together olive oil, Cajun seasoning, garlic powder, smoked paprika, lime juice, salt, and pepper. Add the peeled and deveined shrimp to the bowl and gently toss to ensure each shrimp is thoroughly coated in the marinade. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to infuse.

      Prepare the Rice:

        Rinse the jasmine rice under cold running water until it runs clear. This step removes excess starch for fluffy rice. In a medium-sized saucepan, combine the rinsed rice and coconut milk (or water). Bring the mixture to a gentle boil over medium-high heat. Once boiling, add a pinch of salt, reduce the heat to low, cover with a lid, and simmer for about 15 minutes, or until the rice is tender and the liquid is completely absorbed.

          Add Pineapple and Veggies:

            After the rice is cooked, remove it from heat and allow it to sit covered for 5 minutes.
