Ingredients

1 sheet of puff pastry (thawed if frozen)

3 large yellow onions, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon granulated sugar

Salt and freshly ground pepper, to taste

4 ounces creamy goat cheese, crumbled

1/4 cup fresh thyme leaves (or 1 teaspoon dried thyme)

1 egg, beaten (for egg wash)

Optional: fresh arugula for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it's hot and ready for baking.

Caramelize the Onions: Heat the olive oil in a large skillet over medium heat. Add the thinly sliced onions along with a pinch of salt. Stir occasionally and let them cook for about 15-20 minutes. You want them to become soft and turn a deep golden brown. If you notice the onions browning too quickly, reduce the heat to maintain a steady cooking process.

Infuse Flavor: When the onions are perfectly caramelized, introduce the balsamic vinegar and sugar to the skillet. Stir well and allow it to cook for an additional 2-3 minutes, letting the vinegar evaporate and the flavors meld beautifully. Taste and adjust seasoning with salt and freshly ground pepper, then remove from heat.

Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry to fit your tart pan or baking sheet. Gently transfer the pastry into the tart pan, trimming off any excess edges. Be sure to prick the base all over with a fork to prevent air bubbles while baking.

Assemble the Tart: Evenly distribute the caramelized onion mixture over the pastry base. Sprinkle the crumbled goat cheese and fresh thyme leaves generously on top to complement the sweetness of the onions.

Add an Egg Wash: Lightly brush the edges of the puff pastry with the beaten egg. This will create a beautiful golden crust as it bakes.

Bake the Tart: Slide the tart into the preheated oven and bake for 20-25 minutes, or until the pastry puffs up and turns a rich golden brown.

Serve: Once baked, remove the tart from the oven and allow it to cool for a few minutes. For an added touch, garnish with a handful of fresh arugula, which provides a lovely peppery bite. Slice into wedges and enjoy warm or at room temperature for a delightful savory treat.
