Ingredients

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

4 cups tortilla chips

2 cups shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen, thawed)

1 jalapeño, sliced (optional for heat)

1/2 cup green onions, chopped

1/2 cup sour cream (for topping)

1/4 cup fresh cilantro, chopped (for garnish)

1 teaspoon smoked paprika

Salt and pepper to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready for baking.

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken with your chosen BBQ sauce, smoked paprika, and a pinch of salt and pepper. Stir well until the chicken is thoroughly coated in the sauce, creating a flavorful mixture.

Layer the Nachos: In a 9x13 inch baking dish, spread half of the tortilla chips evenly across the bottom. Gently spoon half of the BBQ chicken mixture over the chips, followed by an even distribution of half of the black beans and corn. Finish this layer by sprinkling half of the shredded cheddar cheese over the top.

Repeat the Layers: Add another layer by placing the remaining tortilla chips on top, followed by the rest of the BBQ chicken mixture. Then, add the remaining black beans, corn, and finally, sprinkle the rest of the cheddar cheese evenly over the top.

Add Jalapeños: For an added spicy kick, if you enjoy heat, scatter the jalapeño slices evenly across the top of the nacho layers.

Bake: Place the baking dish in your preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbling, and has turned slightly golden for that perfect finish.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to cool for a couple of minutes. Drizzle the sour cream generously on top and garnish with chopped green onions and fresh cilantro to elevate the presentation.

Enjoy: Serve warm and dig into this crowd-pleasing cheesy BBQ chicken nacho bake that’s sure to impress!
