Ingredients

1 pound ground chicken

1 tablespoon olive oil

1 cup diced bell peppers (red, green, or yellow)

1/2 cup chopped green onions (scallions)

2 cloves garlic, minced

1 tablespoon minced fresh ginger

1/4 cup soy sauce (or tamari for a gluten-free option)

2 tablespoons honey or agave syrup

Juice and zest of 1 lime

1 teaspoon sesame oil

1/4 teaspoon red pepper flakes (adjust according to your heat preference)

12-15 large butter lettuce or iceberg lettuce leaves

Optional toppings: chopped peanuts, shredded carrots, fresh cilantro, lime wedges

Instructions

Heat the Pan: In a large skillet, add 1 tablespoon of olive oil and heat it over medium heat for about one minute until shimmering.

Cook the Chicken: Once the oil is hot, add the 1 pound of ground chicken to the skillet. Use a spatula to break it apart and cook for 5-7 minutes, or until the chicken is fully browned and no longer pink.

Add Aromatics: Stir in the 1 cup of diced bell peppers, 2 cloves of minced garlic, and 1 tablespoon of minced ginger. Sauté everything together for an additional 2-3 minutes, until the bell peppers soften but retain some crunch.

Make the Sauce: In a separate small bowl, combine the 1/4 cup of soy sauce (or tamari), 2 tablespoons of honey (or agave syrup), the juice and zest of 1 lime, 1 teaspoon of sesame oil, and 1/4 teaspoon of red pepper flakes. Whisk until mixed well. Pour this flavorful mixture over the chicken and vegetables in the skillet.

Simmer: Let the mixture simmer for an additional 3-4 minutes, allowing the sauce to thicken and coat the chicken and vegetables evenly. Stir occasionally.

Prepare the Lettuce Wraps: While the chicken is simmering, rinse and pat dry the lettuce leaves. Select the largest, most intact leaves, as they will be used to hold the filling.

Assemble: Once the skillet is off the heat, spoon about 2-3 tablespoons of the chicken mixture onto each lettuce leaf. Customize by topping with your choice of chopped peanuts, shredded carrots, and fresh cilantro.

Serve: Carefully arrange the filled lettuce wraps on a serving platter. To bring an extra burst of flavor, place lime wedges on the side for guests to squeeze over their wraps.
