Ingredients

For the Chicken Skewers:

1 pound (450g) boneless, skinless chicken breast, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon paprika

Salt and pepper to taste

6 wooden skewers, soaked in water for 30 minutes

For the Pineapple Salsa:

1 cup fresh pineapple, diced

½ red bell pepper, finely chopped

¼ red onion, finely chopped

1 jalapeño, seeded and minced (optional, adjust according to desired spice level)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Instructions

Marinate the Chicken: In a mixing bowl, whisk together olive oil, soy sauce, honey, minced garlic, ground ginger, paprika, salt, and pepper until well combined. Add the cubed chicken breast to the marinade, tossing to ensure each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, or up to 1-2 hours for more intense flavor.

Prepare the Pineapple Salsa: In another bowl, mix together the diced fresh pineapple, finely chopped red bell pepper, red onion, jalapeño (if using), and chopped cilantro. Squeeze the lime juice over the mixture and season with salt to taste. Gently toss everything together until well combined. For optimal flavor, let the salsa rest at room temperature for at least 15 minutes.

Skewer the Chicken: Preheat your grill or grill pan to medium-high heat. Once ready, thread the marinated chicken cubes onto the soaked wooden skewers, ensuring there is a small space between each piece to allow for even cooking.

Grill the Chicken Skewers: Place the skewers on the preheated grill and cook for approximately 10-12 minutes, turning occasionally to achieve even cooking and grill marks. Ensure that the chicken is fully cooked; the internal temperature should reach 165°F (75°C) for safety.

Serve: After grilling, remove the chicken skewers from the grill and serve them hot. Arrange them alongside the vibrant pineapple salsa. For an added burst of color and flavor, garnish the dish with additional chopped cilantro and serve with lime wedges on the side.
