Ingredients

2 ripe avocados

4 large eggs

1 tablespoon olive oil

1 tablespoon fresh lemon juice

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

4 slices of whole grain or sourdough bread

Fresh herbs (cilantro, parsley, or chives), for garnish

Optional toppings: halved cherry tomatoes, thinly sliced radishes, or crumbled feta cheese

Instructions

Prepare the Avocado: Begin by cutting the avocados in half lengthwise. Carefully remove the pit and use a spoon to scoop the flesh into a mixing bowl. To add brightness, drizzle in the fresh lemon juice. Season with salt and pepper to your preference. Using a fork, mash the avocado until you achieve a creamy texture that still has some chunkiness. If you enjoy a kick of spice, fold in the red pepper flakes as well.

Cook the Eggs: Heat a non-stick skillet over medium heat and add the olive oil, allowing it to warm up. Crack the eggs gently into the skillet, ensuring that they do not overlap. Cook until the egg whites are fully set yet the yolks remain runny, which should take about 4-5 minutes for sunny-side up eggs. If you prefer your yolks more cooked, carefully flip the eggs with a spatula and let them cook for an additional minute.

Toast the Bread: While your eggs are cooking, toast the slices of bread to your desired level of crispness. You can achieve this using a toaster, grill, or by placing them in an oven until golden brown.

Assemble the Toast: Once the bread is toasted, generously spread the creamy avocado mixture onto each slice. Carefully place a sunny-side up egg on top of the avocado spread on each toast.

Garnish and Serve: Finish your dish by sprinkling your choice of fresh herbs over the top for a burst of flavor and color. If desired, add optional toppings such as halved cherry tomatoes, thinly sliced radishes, or crumbled feta cheese. For an extra touch, season with a pinch of salt, a twist of black pepper, or additional red pepper flakes.
