Ingredients

12 oz cheese tortellini (fresh or frozen)

1 lb boneless, skinless chicken breasts, cut into bite-sized cubes

2 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning blend

Salt and black pepper to taste

2 cups fresh baby spinach

1/4 cup fresh parsley, chopped, for garnish

Freshly cracked black pepper, to taste

Instructions

Cook the Tortellini: Fill a large pot with water, add a generous amount of salt, and bring it to a rolling boil. Gently add the tortellini and cook according to the package instructions until it reaches an al dente texture. Once done, drain the tortellini well and set it aside.

Prepare the Chicken: In a spacious skillet, heat the olive oil over medium-high heat. Season the cubed chicken with salt, black pepper, and the Italian seasoning. Carefully add the seasoned chicken to the hot skillet and sauté for about 5 to 7 minutes, or until it turns golden brown and is thoroughly cooked. After cooking, transfer the chicken to a plate and keep it warm.

Create the Alfredo Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté the garlic for approximately 1 minute, or until it becomes aromatic. Next, pour in the heavy cream and allow it to come to a gentle simmer. Gradually whisk in the grated Parmesan cheese, stirring continuously until the sauce is luxuriously smooth and creamy.

Combine Ingredients: Return the cooked chicken to the skillet with the Alfredo sauce, followed by the drained tortellini. Carefully toss the mixture until the tortellini and chicken are evenly coated with the creamy sauce. Incorporate the fresh spinach and cook for an additional 2 to 3 minutes, or until the spinach has wilted and is tender.

Serve: Remove the skillet from heat. Garnish the dish with freshly chopped parsley and additional grated Parmesan, if desired. Serve hot, adding freshly cracked black pepper over each serving for an extra kick.
