1 lb (450g) baby potatoes, halved

1 cup heavy cream

1 cup chicken broth

6 cloves garlic, finely minced

1 medium onion, chopped

1 tsp dried thyme

1 tsp dried oregano

1 tsp smoked paprika

Salt and freshly ground black pepper, to taste

2 tbsp extra virgin olive oil

1 cup freshly grated Parmesan cheese

Fresh parsley, chopped, for garnish

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s at the right temperature for baking.

    Prepare the Chicken: Take the chicken breasts and season them generously with salt, pepper, smoked paprika, and half of the dried thyme and oregano. This ensures the chicken is flavorful throughout.

      Sauté the Onion and Garlic: In a large skillet, heat the extra virgin olive oil over medium heat. Once hot, add the chopped onion and sauté until it becomes translucent and slightly golden, about 3-4 minutes. Next, add the minced garlic, cooking for an additional minute or until it’s fragrant, but take care not to burn it.

        Add Cream and Broth: Gradually pour in the heavy cream and chicken broth, stirring to mix well. Bring the mixture to a gentle simmer, then incorporate the remaining thyme and oregano. Taste the sauce and adjust the seasoning with more salt and pepper if desired.
