Ingredients

4 salmon fillets (approximately 6 oz each)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

1 tablespoon unsalted butter

3 cloves of garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

Juice and zest of 1 large lemon

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 cup fresh spinach leaves

Lemon wedges, for serving

Fresh dill sprigs, for garnish

Instructions

Season the Salmon: Start by patting the salmon fillets dry using paper towels. This step will help achieve a nice sear. Generously season both sides of each fillet with salt and freshly ground black pepper.

Sear the Salmon: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering and hot, carefully place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes or until the skin is crisp and golden brown. Gently flip the salmon using a spatula, and continue cooking for an additional 3-4 minutes until the salmon is cooked through. Remove the fillets from the skillet and place them on a plate to rest.

Make the Sauce: Reduce the heat to medium in the same skillet. Add the unsalted butter and allow it to melt completely. Once melted, stir in the minced garlic and sauté for about 1 minute, or until the garlic is fragrant and slightly golden.

Add Cream and Flavorings: Gradually pour the heavy cream into the skillet, stirring continuously. Next, add the Dijon mustard, lemon juice, and lemon zest. Mix well until all ingredients are fully combined. Let the sauce simmer for 2-3 minutes, allowing it to thicken slightly.

Incorporate Dill and Spinach: Add the chopped fresh dill and spinach leaves to the sauce. Gently stir until the spinach is wilted and the flavors meld together. Taste the sauce and adjust the seasoning with more salt and pepper if needed.

Return Salmon to Pan: Carefully place the seared salmon fillets back into the skillet. Spoon the creamy sauce generously over each fillet. Allow everything to simmer together for an additional 2-3 minutes, ensuring that the salmon is heated through.

Serve: To serve, plate the salmon fillets, spooning a generous amount of the creamy sauce on top. Garnish with fresh dill sprigs and a wedge of lemon on the side for an added burst of flavor. Enjoy your dish immediately for the best experience!
