1 cup heavy cream or coconut milk (for a lighter alternative)

1 teaspoon fresh lemon juice

1 cup freshly grated Parmesan cheese (or nutritional yeast for a vegan option)

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

½ teaspoon crushed red pepper flakes (optional, for a touch of heat)

Fresh basil or parsley, chopped, for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add your chosen pasta and cook according to package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and set it aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1-2 minutes, stirring frequently, until fragrant but not browned.

      Add Spinach and Artichokes: Incorporate the chopped spinach into the skillet, cooking for about 2-3 minutes until the spinach wilts down. Then, gently fold in the chopped artichoke hearts and sauté for an additional 2-3 minutes until heated through.

        Make the Cream Sauce: Slowly pour in the heavy cream (or coconut milk) while stirring. Add the fresh lemon juice, allowing the mixture to come to a gentle simmer. Stir in the grated Parmesan cheese, salt, black pepper, and crushed red pepper flakes (if using).
