Ingredients

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for added heat)

Salt and pepper to taste

9 oz cheese tortellini (fresh or frozen)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cups fresh spinach, loosely packed

Fresh basil leaves, for garnish

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 5 minutes until it turns translucent. Add the minced garlic and continue cooking for an additional minute, stirring constantly until fragrant.

Add Tomatoes and Spices: Reduce the heat to medium-high and pour in the crushed tomatoes along with the vegetable broth. Stir everything together, then add the dried basil, oregano, red pepper flakes (if you enjoy a bit of spice), and season with salt and pepper. Bring the mixture to a gentle simmer.

Cook Tortellini: Add the tortellini to the simmering soup. Cook according to the package instructions, which typically takes about 5–7 minutes, stirring occasionally until the tortellini are tender and heated through.

Make it Creamy: Once the tortellini are cooked, lower the heat to low and carefully stir in the heavy cream and grated Parmesan cheese. Allow the soup to heat through gently, taking care not to let it boil, which can cause the cream to curdle.

Add Spinach: When the soup is hot and creamy, fold in the fresh spinach. Let it cook for about 2-3 minutes until the spinach is wilted and tender.

Serve: Taste and adjust the seasoning with additional salt and pepper if necessary. Ladle the creamy tomato tortellini soup into bowls. For an elegant touch, garnish each bowl with fresh basil leaves and a sprinkle of extra Parmesan cheese, if desired.
