12 oz (340g) pasta of your choice (fettuccine or penne recommended)

2 tablespoons extra virgin olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 large zucchini, diced into small cubes

1 (14 oz) can crushed tomatoes

1 cup heavy cream

1 teaspoon dried basil

½ teaspoon dried oregano

Salt and freshly ground pepper, to taste

¼ cup grated Parmesan cheese, plus additional for serving

Fresh basil leaves, for garnish

Cook the Pasta: Bring a large pot of salted water to a vigorous boil. Add the pasta and cook according to package instructions until al dente. Before draining, reserve about ½ cup of the pasta water, then drain the pasta and set it aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes, stirring occasionally, until it turns translucent and soft. Next, stir in the minced garlic and continue to cook for an additional minute or until fragrant.

      Add the Zucchini: Toss the diced zucchini into the skillet, stirring frequently. Cook for 4-5 minutes until the zucchini is tender and begins to develop a golden-brown color.

        Make the Sauce: Stir in the crushed tomatoes, followed by the heavy cream. Mix them together and bring the mixture to a gentle simmer. Season the sauce with dried basil, oregano, salt, and freshly ground pepper. Let it simmer for about 5 minutes to allow the flavors to meld beautifully.

          Combine Pasta and Sauce: Add the drained pasta directly into the sauce, tossing gently to ensure each piece is well coated. If the sauce appears too thick, gradually add reserved pasta water a little at a time until you achieve your desired creaminess.
