Ingredients

1 pound large shrimp, peeled and deveined

12 ounces fettuccine pasta

2 cups heavy cream

1 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

2 tablespoons extra virgin olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh baby spinach

1 teaspoon Italian seasoning

Salt and freshly ground black pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Once boiling, add the fettuccine and cook according to the package directions until al dente. Drain the pasta in a colander and give it a quick rinse with cold water to stop the cooking process. Set aside for later.

Sauté the Shrimp: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the shrimp to the skillet and cook for approximately 2-3 minutes on each side, or until they turn pink and opaque. Season the shrimp with salt, pepper, and Italian seasoning during cooking for added flavor. Once cooked, remove the shrimp from the skillet and set aside.

Prepare the Creamy Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds, just until fragrant. Gradually pour in the heavy cream, stirring continuously while bringing the mixture to a gentle simmer. Reduce the heat to low and mix in the grated Parmesan cheese until it melts into a creamy sauce. Add the fresh baby spinach and halved cherry tomatoes, cooking for an additional 2 minutes until the spinach begins to wilt.

Combine All Ingredients: In a large mixing bowl, combine the drained fettuccine, sautéed shrimp, and creamy sauce. Gently toss everything together until the pasta and shrimp are evenly coated in the luscious sauce.

Assemble the Bake: Preheat your oven to 375°F (190°C). Lightly grease a baking dish, approximately 9x13 inches in size, with cooking spray or a bit of olive oil. Carefully transfer the shrimp and pasta mixture into the prepared baking dish, spreading it out evenly. Sprinkle the shredded mozzarella cheese generously over the top.

Bake to Perfection: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown on top.

Serve and Enjoy: Once baked, remove the dish from the oven and allow it to cool for about 5 minutes. Garnish with fresh basil leaves if desired for an aromatic touch. Serve warm, and savor every creamy bite of your delicious Creamy Tuscan Shrimp Alfredo Bake!
