2 large flour tortillas

1 cup cooked chicken, shredded or diced

1/2 cup basil pesto (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup shredded Parmesan cheese

1 medium tomato, diced

1/4 cup fresh basil leaves, chopped (optional)

1 tablespoon olive oil

Salt and pepper to taste

Optional: sour cream or Greek yogurt for dipping

Prepare the Chicken: If you need to cook your chicken, you can grill, bake, or sauté it in a skillet over medium heat. Use a little olive oil and season it with salt and pepper to taste. After cooking, let it cool for a minute, then shred or dice it into bite-sized pieces.

    Mix the Filling: In a mixing bowl, combine the shredded chicken with the basil pesto, stirring until each piece is well-coated. Add diced tomato along with half of the shredded mozzarella and half of the Parmesan cheese. Stir until all ingredients are evenly incorporated.

      Preheat the Pan: Heat a non-stick skillet over medium heat and add the olive oil, allowing it to become hot but not smoking. This will ensure you achieve a crispy texture on your quesadillas.

        Assemble the Quesadilla: Place one tortilla in the preheated skillet. Evenly distribute the chicken and pesto filling over the tortilla, leaving a small border at the edges to prevent spilling. Sprinkle the remaining mozzarella and Parmesan cheese generously on top. Finally, place the second tortilla on top and press down gently to compact the layers.
