2 medium zucchinis, thinly sliced

1 cup feta cheese, crumbled

1/2 cup fresh spinach, chopped

1/4 cup fresh parsley, chopped

1/4 cup breadcrumbs (panko preferred for extra crunch)

1 large egg

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

4 large tortillas or wraps (whole wheat or spinach-flavored)

Optional: Tzatziki sauce or your favorite dip for serving

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To facilitate easy cleanup, line a baking sheet with parchment paper.

    Prepare the Zucchini: In a mixing bowl, add the thinly sliced zucchini. Sprinkle a pinch of salt over them and let them sit for about 10 minutes. This process helps to draw out excess moisture, making the zucchini crispier when baked. After 10 minutes, gently pat the slices dry with paper towels to remove excess moisture.

      Make the Filling: In a separate bowl, combine the crumbled feta cheese, chopped spinach, parsley, breadcrumbs, egg, garlic powder, paprika, and a generous pinch of salt and pepper. Stir the mixture until all ingredients are thoroughly combined and form a cohesive filling.
