Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons extra virgin olive oil

2 tablespoons Sriracha sauce

1 tablespoon honey or maple syrup (for a vegan option)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1 tablespoon cornstarch (optional, for extra crunch)

Fresh parsley or cilantro, finely chopped, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

Prepare the Chickpeas: Once you've drained and rinsed the chickpeas, take a clean kitchen towel or paper towels and thoroughly dry them. Spread the chickpeas out on the towel and gently pat them dry to remove excess moisture. This step is crucial for achieving that perfect crunch.

Season the Chickpeas: In a large mixing bowl, add the dried chickpeas to the olive oil, Sriracha sauce, honey or maple syrup, garlic powder, smoked paprika, sea salt, black pepper, and cornstarch (if using). Toss the chickpeas gently until they are completely coated with the seasoning mixture, ensuring every chickpea is perfectly flavored.

Arrange on the Baking Sheet: Transfer the seasoned chickpeas onto the prepared baking sheet. Spread them out in a single layer, making sure they are not overcrowded. This will help them roast evenly and achieve maximum crispiness.

Roast the Chickpeas: Place the baking sheet in the preheated oven and roast for approximately 25-30 minutes. About halfway through the cooking time, give the pan a good shake to ensure even roasting. Keep an eye on them during the last few minutes to avoid burning; they should be golden brown and perfectly crispy when done.

Cool and Garnish: After roasting, carefully remove the chickpeas from the oven and allow them to cool for a few minutes on the baking sheet. For an added touch, sprinkle some freshly chopped parsley or cilantro on top for a vibrant splash of color and a burst of freshness.

Serve: Relish your spicy crispy Sriracha roasted chickpeas as a delightful snack on their own, a tasty topping for salads, or an excellent addition to grain bowls for extra flavor and crunch!
