Ingredients

2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (a mix of oregano, basil, and rosemary)

Salt and pepper, to taste

2 large eggs

1/4 cup all-purpose flour

Cooking spray or olive oil for baking

Instructions

Preheat Your Oven: Begin by preheating your oven to 425°F (220°C). A hot oven will help your zucchini fries turn out wonderfully crisp.

Prepare the Zucchinis: Rinse the zucchinis under cool water and pat them dry with a paper towel. Trim off both ends and slice each zucchini into fry shapes, around 1/4 inch thick to ensure even cooking.

Set Up Your Breading Station: Organize three shallow dishes:

        - In the first dish, add the all-purpose flour.

          - In the second dish, beat the two eggs until smooth.

            - In the third dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, and a sprinkle of salt and pepper.

Bread the Zucchini Fries: Take one zucchini fry and dip it into the flour, shaking off the excess. Next, immerse it in the beaten eggs, allowing any extra egg to drip back into the dish. Finally, coat it in the breadcrumb mixture, pressing gently to ensure a good coverage. Repeat this process for all the zucchini fries.

Arrange on a Baking Sheet: Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking. Place the breaded zucchini fries on the sheet in a single layer, making sure they are not touching; this promotes even crispiness.

Bake the Fries: Lightly spray the tops of the zucchini fries with cooking spray or drizzle with a little olive oil for extra flavor. Bake in the preheated oven for about 20-25 minutes, turning them halfway through baking, until they are golden brown and achieve a satisfying crispiness.

Serve and Enjoy: Once done, remove the fries from the oven and allow them to cool for a few minutes. These delightful zucchini fries are tasty on their own, but they pair wonderfully with your favorite dipping sauce, such as marinara or ranch!
