Ingredients

2 ripe bananas

1 cup creamy peanut butter (or your preferred nut butter)

1 cup dark chocolate chips (or milk chocolate, based on your preference)

1 tablespoon coconut oil (used for melting the chocolate)

Sea salt (for garnish)

Optional: 1/4 cup granola or crushed nuts for added crunch

Instructions

Prepare the Bananas: Start by peeling the bananas. Slice them into rounds about 1/4-inch thick; you should end up with approximately 16 slices from the two bananas.

Spread the Nut Butter: Take one slice of banana and generously spread a layer of peanut butter on one side. Top it with another banana slice to create a sandwich. Repeat this process until all the banana slices are paired up.

Freeze the Sandwiches: Arrange the assembled banana sandwiches in a single layer on a parchment-lined baking sheet. Place the baking sheet in the freezer for around 30 minutes, or until the sandwiches are firm to the touch.

Melt the Chocolate: In a small saucepan, combine the dark chocolate chips and coconut oil. Melt the mixture over low heat, stirring continuously until it becomes smooth and well combined. Alternatively, you can microwave the chocolate mixture in 30-second intervals, stirring in between each interval until melted.

Dip the Sandwiches: Once the banana sandwiches are firm, take them out of the freezer. Dip each sandwich into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off, then return the sandwiches to the parchment-lined baking sheet.

Add Toppings: While the chocolate is still slightly warm, sprinkle a pinch of sea salt or your choice of granola or crushed nuts on top of each sandwich for an extra layer of flavor and crunch.

Final Freeze: Place the chocolate-covered sandwiches back in the freezer for an additional 15-20 minutes or until the chocolate has completely set and hardened.

Enjoy: Once the chocolate has set, serve the sandwiches immediately, or store them in an airtight container in the freezer for up to one week for a refreshing treat!
