Frozen Blueberry Greek Yogurt Pops

Ingredients
  

2 cups fresh or frozen blueberries

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust based on your preferred level of sweetness)

1 tablespoon freshly squeezed lemon juice

1 teaspoon pure vanilla extract

A pinch of salt

Optional: Additional blueberries and fresh mint leaves for garnish

Instructions
 

Prepare the Blueberries: If you're using fresh blueberries, rinse them thoroughly under cold water and set them aside to dry. If you're opting for frozen blueberries, let them thaw at room temperature for about 10 minutes to soften.

    Blend the Mixture: In a blender or food processor, combine the prepared blueberries, Greek yogurt, honey (or maple syrup), lemon juice, vanilla extract, and a pinch of salt. Blend the mixture until completely smooth. If you prefer some texture, blend only half of the blueberries, then fold in the remaining whole blueberries after blending.

      Assemble the Pops: For a fruitier popsicle, gently fold the reserved blueberries into the yogurt mixture after blending. Once combined, pour the mixture into popsicle molds, filling each mold about 3/4 full to allow for expansion during freezing.

        Insert Sticks: If your popsicle molds come with built-in slots for sticks, insert them into the filled molds. If your molds don’t have slots, cover them with plastic wrap and poke a stick through the wrap and into the mixture.

          Freeze: Place the filled molds in the freezer and allow them to freeze for at least 4-6 hours, or until they are completely solid.

            Serve: Once your popsicles are frozen, carefully remove them from the molds. If they’re difficult to release, run warm water over the outside of the molds for a few seconds to help loosen them. Enjoy the refreshing taste of your blueberry Greek yogurt pops!

              Garnish (optional): For a delightful finishing touch, serve the popsicles topped with a few extra blueberries and a sprig of fresh mint.
