Ingredients

2 cups of Greek yogurt (choose between plain or flavored)

1 cup of fresh strawberries, hulled and halved

2 tablespoons of honey (substitute with maple syrup for a vegan option)

1 teaspoon of vanilla extract

A pinch of salt

1 cup of granola or crushed nuts (optional, for added crunch)

Mini muffin tin or silicone molds

Instructions

Prepare the Strawberries: In a medium-sized bowl, combine the halved strawberries with 1 tablespoon of honey (or maple syrup) and a pinch of salt. Gently toss the strawberries to ensure they are well-coated. Let them sit for about 10 minutes, allowing the flavors to meld and the strawberries to absorb some sweetness.

Make the Yogurt Mixture: In a separate bowl, whisk together the Greek yogurt, the remaining tablespoon of honey, and the vanilla extract until the mixture is smooth and well-blended. This will create a creamy and delicious base for your yogurt bombs.

Assemble the Bombs: Using a spoon, fill each mini muffin cup or silicone mold with a layer of the yogurt mixture, filling it about one-third of the way full. Next, add one or two pieces of the prepared strawberry mixture into each cup. Top with additional yogurt until the molds are approximately three-quarters full, ensuring each bomb is well-balanced with yogurt and strawberries.

Add Crunch (Optional): If desired, sprinkle a small amount of granola or crushed nuts on top of the yogurt layer in each mold. This will give your yogurt bombs a delightful crunch when you bite into them.

Freeze: Carefully transfer the muffin tin or silicone molds to the freezer. Allow them to freeze for at least 4-6 hours, or until they are completely solid and set.

Unmold and Serve: Once the yogurt bombs are fully frozen, gently remove them from the molds. If you are using a muffin tin, you can run warm water over the bottom for easier release. Serve the yogurt bombs immediately for a refreshing treat, or store them in a zip-top bag in the freezer for later enjoyment.
