2 ripe peaches, peeled and diced

1 ripe mango, peeled and diced

1 cup coconut cream, chilled

1 cup plain or vanilla Greek yogurt

1/4 cup honey or maple syrup (adjust according to your preferred sweetness)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Fruit: Begin by placing the diced peaches and mangoes into a blender. Blend the fruits on high speed until smooth and creamy. If you enjoy a bit of texture, set aside a small portion of the diced fruit before blending, and stir this back into the mixture later.

    Mix the Cream Mixture: In a separate mixing bowl, add the chilled coconut cream and Greek yogurt. Using a whisk, blend these together until the mixture is smooth and fully combined. Incorporate the honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt, whisking until you have a uniform cream mixture.

      Combine: Carefully fold the blended peach-mango puree into the cream mixture using a spatula, ensuring that the two are fully incorporated without deflating the mixture. If you reserved some diced peach and mango earlier, gently stir these in for an added burst of flavor and texture.

        Prepare the Pan: Take an 8x8 inch square baking dish and line it with parchment paper, allowing some overhang on the sides for easy lifting later. Pour the fruit and cream mixture into the prepared pan. Use a spatula to smooth the top for a neat appearance.

          Freeze: Cover the dish tightly with plastic wrap and place it in the freezer. Allow the mixture to freeze for approximately 4 to 6 hours, or until it is completely set and firm to the touch.
