2 large apples, peeled, cored, and finely chopped (Granny Smith or Honeycrisp recommended)

1 tablespoon lemon juice

1 tablespoon ground cinnamon

2 tablespoons brown sugar

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 tablespoon water

For the Yogurt Layer:

3 cups plain or vanilla Greek yogurt

1/4 cup honey or maple syrup (to taste)

1 teaspoon vanilla extract

For the Crust:

1 1/2 cups graham cracker crumbs

1/3 cup melted coconut oil or unsalted butter

2 tablespoons granulated sugar

1/4 teaspoon salt

For Topping (Optional):

Crushed nuts (such as walnuts or pecans) or crumbled granola

Instructions
 

Prepare the Apple Mixture:

    - In a medium saucepan over medium heat, combine the finely chopped apples, lemon juice, ground cinnamon, brown sugar, vanilla extract, and cornstarch mixed with water.

      - Cook the mixture for about 5-7 minutes, stirring occasionally, until the apples are just tender and the sauce has thickened slightly.

        - Remove the pan from heat and allow the mixture to cool to room temperature.

          Make the Yogurt Layer:

            - In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and homogeneous. Taste the yogurt layer and adjust the sweetness as desired.

              Prepare the Crust:

                - In a separate mixing bowl, combine the graham cracker crumbs, melted coconut oil (or butter), granulated sugar, and salt. Stir the mixture until all the crumbs are evenly coated.

                  - Press the crumb mixture firmly into the bottom of a parchment-lined 9x9 inch baking dish to form a solid, even crust. Set aside.
