Ingredients

2 cups vanilla Greek yogurt

1 cup funfetti cake mix

¼ cup milk (dairy or non-dairy for your preference)

¼ cup honey or maple syrup

1 tsp vanilla extract

½ cup colorful sprinkles (plus extra for decoration)

1 cup crushed graham crackers (for the crust)

½ cup unsalted butter, melted (or coconut oil for a vegan option)

Pinch of salt

Instructions

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, melted butter (or coconut oil), and a pinch of salt. Mix until the mixture resembles wet sand and is well combined.

Press the Crust: Line an 8x8 inch square baking dish with parchment paper, allowing some overhang for easy removal later. Pour the graham cracker mixture into the dish, then use the back of a measuring cup to press it down firmly to create an even and compact crust. Place the dish in the freezer for about 10 minutes to set.

Make the Yogurt Layer: In a separate mixing bowl, combine the vanilla Greek yogurt, funfetti cake mix, milk, honey (or maple syrup), and vanilla extract. Stir the mixture until smooth and fully combined, ensuring all ingredients are well blended.

Add Sprinkles: Carefully fold in ½ cup of colorful sprinkles into the yogurt mixture, making sure they are evenly distributed throughout.

Assemble the Cake Bars: Retrieve the crust from the freezer. Pour the yogurt mixture over the crust, using a spatula to spread it out evenly. If desired, sprinkle additional colorful sprinkles on top for decoration.

Freeze: Cover the baking dish with plastic wrap to prevent any freezer odors from affecting your bars. Freeze for at least 4-5 hours, or until completely firm so you can easily cut the bars.

Cut the Bars: Once fully frozen, use the edges of the parchment paper to lift the cake out of the dish. Use a sharp knife to cut it into squares or bars, wiping the knife clean between cuts for neat edges.

Serve: Enjoy these delicious birthday cake bars immediately, or store any leftovers in an airtight container in the freezer. For an extra festive touch, sprinkle additional colorful sprinkles on top just before serving!
