Ingredients

4 cod fillets (approximately 6 ounces each)

4 tablespoons unsalted butter, melted

4 cloves garlic, finely minced

1 tablespoon fresh parsley, finely chopped (plus extra for garnish)

1 teaspoon lemon zest (from about 1 lemon)

2 tablespoons fresh lemon juice

1 teaspoon smoked paprika (for a richer flavor)

Salt and black pepper, to taste

Lemon wedges, for serving

Instructions

Preheat Oven: Begin by preheating your oven to 400°F (200°C). To make cleanup a breeze, line a baking dish with parchment paper.

Prepare the Garlic Butter: In a small mixing bowl, combine the melted butter with the minced garlic, chopped parsley, lemon zest, lemon juice, smoked paprika, and a sprinkle of salt and pepper. Whisk together until the mixture is uniform and fragrant.

Arrange Cod: Take the cod fillets and place them skin-side down in the lined baking dish. Pour the garlic butter mixture evenly over each fillet, making sure they are generously coated to infuse maximum flavor.

Bake: Transfer the baking dish to the preheated oven and bake for 15-20 minutes. The cod is done when it easily flakes apart when tested with a fork and has turned opaque in color.

Garnish and Serve: Once baked, remove the cod from the oven and allow it to rest for about 2 minutes. Before serving, garnish the dish with additional chopped parsley. Present it with fresh lemon wedges on the side for an extra burst of flavor.
