Ingredients

For the Garlic Herb Chicken:

4 boneless, skinless chicken breasts

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon olive oil

Salt and pepper to taste

Juice of 1 lemon

For the Cheddar Potato Bites:

2 cups russet potatoes, peeled and diced

1 cup sharp cheddar cheese, shredded

1/4 cup green onions, sliced

1/4 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 cup breadcrumbs (optional, for extra crunch)

Olive oil spray or canola oil spray

Instructions

Marinate the Garlic Herb Chicken:

    - In a medium bowl, combine the minced garlic, chopped parsley, chopped thyme, olive oil, lemon juice, salt, and pepper, stirring until well blended.

      - Place the chicken breasts into a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, allowing the flavors to infuse. For best results, marinate for 1 to 2 hours.

        Cook the Chicken:

          - Preheat your oven to 375°F (190°C).

            - In a large oven-safe skillet, heat over medium-high heat. Remove the chicken from the marinade, allowing any excess marinade to drip off, and sear each breast in the hot skillet for approximately 5 minutes per side, or until they are golden brown.

              - Once seared, transfer the entire skillet to the preheated oven. Bake for an additional 15-20 minutes, or until the chicken is cooked through and registers an internal temperature of 165°F (75°C).

                - After baking, allow the chicken to rest for a few minutes before slicing.

                  Prepare the Cheddar Potato Bites:

                    - While the chicken is baking, fill a pot with salted water and bring to a boil. Add the diced potatoes and cook until tender, approximately 15 minutes. Once done, drain the potatoes and let them cool for a few minutes.

                      - In a large mixing bowl, mash the cooked potatoes until smooth. Add the shredded cheddar cheese, sliced green onions, sour cream, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated.

                        - If desired, shape the mixture into small balls and roll them in breadcrumbs for that extra crunch factor.

                          Cook the Potato Bites:

                            - Preheat a non-stick skillet over medium heat, lightly spraying the surface with olive oil or canola oil spray.

                              - Carefully place the potato bites in the skillet, cooking for about 3-4 minutes on each side or until they turn golden brown and crispy. Alternatively, for a baked version, preheat your oven to 375°F (190°C), arrange the potato bites on a greased baking sheet, and bake for 20 minutes, flipping halfway through to ensure even cooking.

                                Serve:

                                  - Slice the garlic herb chicken into portions and plate them alongside the crispy cheddar potato bites. For an added touch, garnish with additional fresh herbs like parsley or thyme, enhancing both the flavor and presentation.
