8 large waffles (store-bought or homemade)

8 slices of crispy cooked bacon, chopped

4 large eggs

2 cups whole milk

1 cup maple syrup (plus additional for serving)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup shredded cheddar cheese (optional)

Fresh blueberries or strawberries for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish generously with non-stick cooking spray to prevent sticking.

    Prepare the Waffles: If you're making homemade waffles, cook them as per your recipe and let them cool for a few minutes. If using store-bought waffles, lightly toast them to enhance their flavor and texture.

      Layer the Base: Cut the cooled waffles into quarters. Arrange half of the waffle pieces evenly at the bottom of your prepared baking dish. Sprinkle half of the chopped bacon over the layer of waffles.

        Create the Egg Mixture: In a large mixing bowl, crack the eggs and add the milk, maple syrup, vanilla extract, ground cinnamon, and salt. Whisk this mixture together until well combined and frothy.

          Add Remaining Layers: Pour half of the egg mixture over the layered waffles and bacon in the baking dish. Next, add the remaining quartered waffles on top, followed by the rest of the chopped bacon. Finally, pour the remaining egg mixture over everything and, if desired, sprinkle shredded cheddar cheese on top for an extra layer of flavor.

            Soak: Allow the casserole to sit for about 10-15 minutes. This resting time will enable the waffles to soak up the egg mixture, enhancing the dish's flavor and texture.

              Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes.
