8 oz mixed mushrooms (cremini, shiitake, and oyster), sliced

3 tablespoons olive oil (plus extra for brushing the bread)

Salt and freshly ground black pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon freshly squeezed lemon juice

8 slices of rustic bread (such as sourdough or ciabatta)

Fresh parsley, finely chopped, for garnish

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C) to ensure it's ready for roasting the mushrooms and toasting the bread.

      Roast the Mushrooms:

        a. On a large baking tray, combine the sliced mushrooms with 3 tablespoons of olive oil, seasoning with salt and black pepper to taste.

          b. Spread the mushrooms evenly in a single layer to allow for proper roasting. Place in the preheated oven for approximately 20 minutes, or until they are golden brown and tender. At the halfway mark, stir them gently to promote even cooking and browning.

            Prepare the Alfredo Sauce:

              a. In a medium saucepan set over medium heat, add a drizzle of olive oil (or a small pat of butter) and let it warm up.

                b. Introduce the minced garlic and sauté for 1-2 minutes until fragrant, taking care not to let it brown.

                  c. Gradually pour in the heavy cream, stirring continuously. Allow it to simmer gently for 3-4 minutes, letting it thicken slightly for a rich texture.

                    d. Slowly whisk in the freshly grated Parmesan cheese until the mixture is smooth and creamy. Add in the thyme leaves and lemon juice, mixing well. Season with salt and pepper to your preference, then remove from heat.
