Grilled Corn Tacos

4 ears of fresh corn, husked

8 small corn tortillas

1 cup canned black beans, drained and rinsed

1 red bell pepper, diced into small pieces

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/2 cup crumbled feta cheese (or substitute with queso fresco)

1/4 cup fresh cilantro, chopped

Juice from 2 limes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

Grill the Corn:

    Start by preheating your grill to medium-high heat. Brush each ear of corn with olive oil, then sprinkle evenly with garlic powder, chili powder, salt, and pepper. Place the corn directly onto the grill. Grill the corn for approximately 10-15 minutes, turning it occasionally to ensure even cooking. Look for tender corn with beautiful grill marks before removing it from the grill. Allow the corn to cool for a few minutes before handling.

      Prepare the Corn Kernels:

        Once the grilled corn is cool enough to touch, carefully use a sharp knife to cut the kernels off the cob. Transfer the kernels to a large mixing bowl. Add the diced red bell pepper, rinsed black beans, halved cherry tomatoes, finely chopped red onion, and chopped cilantro. Squeeze the fresh lime juice over this colorful mixture and gently toss everything together to combine well. Taste the mixture and adjust the seasoning with salt and pepper as needed.

          Warm the Tortillas:
