1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup fresh basil pesto (store-bought or homemade)

1 red bell pepper, cut into 1-inch pieces

1 medium zucchini, sliced into thick rounds

1 medium red onion, cut into wedges

1 cup cherry tomatoes

2 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper to taste

Skewers (wooden or metal)

Marinate the Chicken: In a large mixing bowl, combine the chicken cubes with half of the basil pesto. Stir thoroughly to ensure each piece is evenly coated with the pesto. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or for up to 2 hours if you want a more pronounced flavor.

    Prepare the Vegetables: While the chicken is marinating, wash and chop the vegetables. In a separate mixing bowl, toss the red bell pepper, zucchini rounds, onion wedges, and cherry tomatoes with the olive oil, along with a pinch of salt and freshly ground pepper. Ensure all vegetables are well coated.

      Soak the Skewers (if using wooden): If you’re opting for wooden skewers, soak them in water for 30 minutes. This will help prevent burning on the grill.
