1 (4-5 lbs) bone-in and skin-on turkey breast

1 cup unsalted butter, softened to room temperature

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh sage, finely chopped

4 cloves garlic, minced

Zest of 1 lemon

Salt and pepper, to taste

2 cups low-sodium chicken broth

1 medium onion, quartered

2 carrots, chopped into large pieces

2 stalks celery, chopped into large pieces

Fresh herbs for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 325°F (165°C) to prepare for roasting.

    Prepare the Herb Butter: In a medium mixing bowl, combine the softened butter with the finely chopped rosemary, thyme, and sage. Add the minced garlic, lemon zest, and a generous pinch of salt and pepper. Mix thoroughly until all the herbs and seasonings are well incorporated into the butter.

      Prepare the Turkey: Use paper towels to pat the turkey breast dry thoroughly. Carefully lift the skin away from the turkey breast meat using your fingers to create a pocket, being cautious not to tear the skin. Evenly distribute about half of the herb butter under the skin, spreading it over the meat for maximum flavor. Rub the remaining herb butter generously all over the exterior of the turkey breast, ensuring full coverage.

        Set the Aromatics: In a large roasting pan, place the quartered onion, chopped carrots, and celery at the bottom. These aromatic vegetables will serve as a flavorful bed for the turkey and enhance the broth during cooking.

          Add the Turkey: Position the herb-buttered turkey breast on top of the arranged vegetables in the roasting pan. Carefully pour the chicken broth around the turkey, making sure not to wash off any of the herb butter.
