Ingredients

4 boneless, skinless chicken breasts

1/2 cup fresh lemon juice (about 2-3 medium lemons)

Zest of 1 lemon

1/4 cup honey

1/4 cup extra virgin olive oil

3 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, finely chopped)

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 tablespoon soy sauce (optional, for an extra umami flavor)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the fresh lemon juice, lemon zest, honey, olive oil, minced garlic, dried thyme, salt, black pepper, and soy sauce if using. Whisk the ingredients together thoroughly until the mixture is well blended.

Marinate the Chicken: Place the chicken breasts into a large resealable plastic bag or a shallow glass dish. Pour the prepared marinade over the chicken, ensuring that each piece is evenly coated. Seal the bag tightly or cover the dish with plastic wrap, then refrigerate. Allow the chicken to marinate for a minimum of 30 minutes, or up to 2 hours for enhanced flavor and moisture.

Preheat the Oven: Set your oven to heat at 400°F (200°C) so it's ready for the chicken.

Sear the Chicken: Heat a large oven-safe skillet over medium-high heat and add a splash of olive oil. Take the marinated chicken out of the bag or dish, reserving the marinade. Add the chicken breasts to the skillet and sear them for about 3-4 minutes on each side, until they develop a lovely golden brown crust.

Bake the Chicken: Once the chicken is seared, pour the reserved marinade over the top of the chicken in the skillet. Carefully transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken's internal temperature reaches 165°F (74°C).

Glaze the Chicken: In the final 5 minutes of baking, baste the chicken with the glaze from the skillet. This will help to create a shiny, flavorful coating on the chicken.

Serve and Garnish: After the chicken is fully cooked, remove the skillet from the oven and allow the chicken to rest for a few minutes. This helps keep it juicy. Before serving, garnish with freshly chopped parsley for a pop of color and freshness. Pair with your choice of sides, such as roasted vegetables or a light salad.
