Ingredients

2 slices of sourdough bread

1 medium apple (such as Granny Smith or Honeycrisp), cored and thinly sliced

4 strips of crispy bacon

1 tablespoon pure maple syrup

1 tablespoon unsalted butter, softened

1/2 teaspoon ground cinnamon

1 cup shredded sharp cheddar cheese

1/4 cup creamy goat cheese, crumbled

Salt and freshly ground black pepper to taste

Instructions

Roast the Apples:

    - Preheat your oven to 400°F (200°C).

      - In a mixing bowl, combine the thin apple slices with maple syrup, ground cinnamon, a pinch of salt, and freshly cracked black pepper. Toss to evenly coat the apple slices.

        - Arrange the coated apple slices in a single layer on a baking sheet lined with parchment paper. Place in the preheated oven and roast for approximately 10-12 minutes, or until the apples are tender and lightly caramelized. Once done, remove them from the oven and set aside.

          Prepare the Bacon:

            - While the apples roast, heat a skillet over medium heat. Add the bacon strips and cook, flipping occasionally, until they become crispy. Once cooked, transfer the bacon to a paper towel-lined plate to absorb any excess grease.

              Assemble the Sandwich:

                - Take each slice of sourdough bread and spread a thin, even layer of softened butter on one side.

                  - On the unbuttered side of one slice, add half of the shredded cheddar cheese, then layer the roasted apple slices on top, followed by the crispy bacon strips, crumbled goat cheese, and finally the remaining shredded cheddar. Top with the other slice of bread, ensuring the buttered side is facing up.

                    Grill the Sandwich:

                      - In the same skillet used for cooking the bacon, reduce the heat to medium-low. Carefully place the assembled sandwich into the skillet.

                        - Grill for about 3-4 minutes, or until the bottom slice of bread turns a lovely golden brown and the cheese starts to melt.

                          - Using a spatula, gently flip the sandwich over, pressing down softly. Cook for an additional 3-4 minutes until the second side is golden brown and the cheese is beautifully melted.

                            Serve:

                              - Once grilled to perfection, remove the sandwich from the skillet and allow it to rest for about a minute. This resting period helps the cheese set slightly for easier slicing.

                                - Cut the sandwich in half and revel in the deliciousness of your Maple Roasted Apple Bacon Grilled Cheese!
