1 tablespoon extra-virgin olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Sea salt and freshly ground black pepper, to taste

1 head of butter lettuce or romaine, leaves carefully separated

1 small cucumber, finely diced

1 small red bell pepper, finely diced

1/4 cup red onion, finely chopped

1 ripe avocado, diced

1/4 cup fresh cilantro, roughly chopped

Zest and juice of 1 lime

Optional: crumbled feta cheese or diced jalapeños for topping

Prepare the Chickpeas: Preheat your oven to 400°F (200°C). In a mixing bowl, combine the rinsed chickpeas with the olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss the chickpeas until they are evenly coated in the oil and spices.
