Ingredients

4 medium zucchini

1 lb (450g) ground beef or turkey

1 medium onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon taco seasoning

½ cup black beans, drained and rinsed

½ cup corn, drained (either frozen or canned)

1 cup shredded cheddar cheese

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Preheat the Oven:

Begin by preheating your oven to 375°F (190°C). This will ensure that it's hot and ready for baking the zucchini boats.

      Prepare the Zucchini:

Rinse the zucchini thoroughly and slice each one in half lengthwise. Carefully scoop out the seeds and flesh from the center using a spoon, creating little “boats” while leaving about ¼ inch of zucchini flesh on the sides for structure. Set the removed flesh aside for later use.

          Cook the Filling:

In a large skillet, heat the olive oil over medium heat. Add the diced onion, red bell pepper, green bell pepper, and minced garlic. Sauté these vegetables for about 5-6 minutes, or until they are softened and fragrant.

              Add the Protein:

Next, add the ground beef or turkey to the skillet. Cook the meat, breaking it apart with a spatula, until it’s nicely browned, which should take about 7-8 minutes. Once cooked, drain any excess fat from the skillet.

                  Season the Mixture:

Stir in the taco seasoning along with the reserved zucchini flesh, black beans, and corn. Cook this mixture for an additional 2-3 minutes, stirring well to combine and let the flavors meld together. Season it all with salt and pepper to taste.

                      Stuff the Zucchini Boats:

Carefully spoon the fajita filling into each of the zucchini boats, packing them generously. Arrange the stuffed zucchini on a baking sheet lined with parchment paper to prevent sticking.

                          Add Cheese:

Sprinkle a generous amount of shredded cheddar cheese over the top of each stuffed zucchini boat, ensuring they are well-covered for that melty goodness.

                              Bake:

Place the baking sheet in the preheated oven and bake for approximately 20-25 minutes. The zucchinis should become tender, and the cheese will be melted and bubbly, creating a deliciously inviting dish.

                                  Serve:

Once baked, remove the zucchini boats from the oven. Garnish with freshly chopped cilantro for a pop of color and flavor. Serve them warm with lime wedges on the side for an extra zing when squeezed over the top.
