2 cloves garlic, minced

1 pound ground beef (or turkey)

1 packet taco seasoning (about 1 ounce)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar or a cheese blend)

1/2 cup frozen corn (optional, for added sweetness and texture)

1/2 cup black beans, rinsed and drained (optional, for extra protein)

2 large eggs

1/2 cup milk

1/4 cup fresh cilantro, chopped (optional, for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or line with muffin liners for easy removal after baking.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain the pasta and set aside to cool slightly.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. When hot, add the diced onion and sauté for about 3 minutes, or until the onion becomes translucent. Add the minced garlic and continue to cook for an additional 30 seconds, stirring frequently, until fragrant.

        Brown the Meat: Increase the heat to medium-high and add the ground beef (or turkey) to the skillet. Cook until the meat is browned and cooked through, breaking it up with a spatula as it cooks. Drain any excess fat if necessary, then remove from heat.
