Salt and pepper, to taste

4 small flour tortillas (about 6 inches each)

1 tablespoon olive oil or melted butter

Optional garnish: fresh parsley or dill

Stir well to combine all ingredients thoroughly. Season with salt and pepper to taste, then gently fold in the shredded cheddar cheese to incorporate.

    Fill the Tortillas: Lay a tortilla flat on a clean work surface. Spoon approximately 1/4 cup of the tuna mixture into the center of the tortilla. Fold the sides inward over the filling, then roll it tightly from the bottom up to create a secure pocket. Repeat this process with the remaining tortillas and tuna filling.

      Heat the Tortilla Pockets: In a large skillet, add the olive oil or melted butter and heat over medium heat. Once the oil or butter is hot and shimmering, carefully place the stuffed tortilla pockets seam-side down in the skillet. Cook them in batches if necessary to avoid overcrowding.

        Cook until Golden: Allow each tortilla pocket to cook for about 2-3 minutes on one side until it turns golden brown and crispy. Using a spatula, gently flip the pockets to cook the other side, being careful to keep them closed while cooking.
