Ingredients

1 cup creamy natural peanut butter (unsweetened)

½ cup powdered sugar

1 teaspoon pure vanilla extract

1 cup graham cracker crumbs

1 cup dark chocolate chips (substitute with milk chocolate if preferred)

2 tablespoons coconut oil (or unsalted butter)

Instructions

Prepare the Peanut Butter Mixture: In a mixing bowl, combine the creamy peanut butter, powdered sugar, and vanilla extract. Use a spatula or wooden spoon to mix thoroughly until the mixture is smooth and well integrated. Gradually fold in the graham cracker crumbs until the mixture achieves a thick, dough-like consistency. Set this mixture aside for later use.

Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and the coconut oil. Microwave the mixture in 30-second intervals, stirring well between each session until the chocolate is fully melted and silky smooth. Be cautious not to overheat the mixture, as chocolate can easily scorch.

Assemble the Cups: Line a muffin tin with paper liners to make it easy to remove the cups later. Pour approximately one tablespoon of the melted chocolate into the bottom of each paper liner. Use the back of a spoon to spread the chocolate evenly across the base. Place the lined muffin tin in the refrigerator for 10-15 minutes to allow the chocolate to set firmly.

Add the Peanut Butter Layer: Once the chocolate layer has set, remove the muffin tin from the fridge. Take a tablespoon of the peanut butter mixture, flatten it slightly in your hands, and place it on top of the hardened chocolate in each liner. Gently press down to secure the peanut butter layer in place without allowing it to overflow.

Top with More Chocolate: Spoon another tablespoon of the melted chocolate over the peanut butter layer in each cup, ensuring it completely covers the peanut butter. Use the back of a spoon if necessary to smooth out the top layer.

Final Set: Return the muffin tin to the refrigerator for an additional 20-30 minutes, or until the top chocolate layer has fully hardened.

Serve and Enjoy: After the cups have set, carefully remove them from the muffin tin and peel away the paper liners. Serve immediately, or store any leftovers in an airtight container in the refrigerator for up to a week.
