One-Skillet Creamy Chicken Marsala

4 boneless, skinless chicken breasts (approx. 1.5 lbs)

Salt and pepper, to taste

1/2 cup all-purpose flour, for dredging

2 tablespoons olive oil

2 tablespoons unsalted butter

8 ounces cremini mushrooms, sliced

3 cloves garlic, minced

1 cup sweet Marsala wine

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Start by seasoning the chicken breasts generously with salt and pepper on both sides. Dredge each chicken breast in the flour, making sure to shake off any excess flour, so the coating is light and even.

    Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the chicken breasts to the skillet. Sear them for approximately 5-7 minutes on each side, cooking until they are golden brown and cooked through (internal temperature should reach 165°F). Once done, remove the chicken from the skillet and set aside on a plate.

      Cook the Mushrooms: In the same skillet, reduce the heat to medium and add the unsalted butter. Once melted, add the sliced cremini mushrooms, stirring occasionally. Sauté them for 5-6 minutes, or until they are beautifully browned and tender.

        Add Garlic: Incorporate the minced garlic into the skillet, stirring continuously for about 30 seconds or until the garlic becomes fragrant, ensuring it does not burn.

          Deglaze with Wine: Carefully pour in the sweet Marsala wine, using a wooden spoon to scrape up any brown bits stuck to the bottom of the skillet. Allow the mixture to simmer for 2-3 minutes, reducing slightly and intensifying the flavor.

            Make the Sauce: Pour in the chicken broth and bring the mixture to a gentle simmer. Next, stir in the heavy cream and dried thyme, mixing well until combined. Let the sauce simmer for an additional 3-5 minutes, stirring occasionally, until it thickens to your desired consistency.

              Return Chicken to Pan: Return the seared chicken breasts to the skillet, submerging them in the creamy Marsala sauce. Cover and let them simmer for another 5 minutes, allowing the flavors to meld beautifully.

                Serve: Before serving, garnish the dish with freshly chopped parsley for a pop of color and freshness. This creamy chicken Marsala pairs wonderfully with pasta, rice, or mashed potatoes for a complete meal.
