Peach Glazed Tofu

1 block (14 oz) firm tofu, pressed and drained

1 cup fresh peaches, peeled and diced

1/4 cup peach preserves

2 tablespoons soy sauce

1 teaspoon rice vinegar

1 teaspoon cornstarch

2 tablespoons water

1 tablespoon olive oil

1 teaspoon garlic, minced

1 teaspoon fresh ginger, minced

Salt and pepper, to taste

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Tofu: Begin by slicing the pressed tofu into slabs that are about 1/2 inch thick. Use a paper towel to pat each slab dry, then lightly season both sides with salt and pepper to enhance the flavor.

    Make the Peach Glaze: In a medium saucepan, combine the diced peaches, peach preserves, soy sauce, rice vinegar, minced garlic, and minced ginger. Place the saucepan over medium heat, stirring occasionally. Allow the mixture to simmer for approximately 5-7 minutes, or until the peaches become tender and the sauce thickens slightly.

      Thicken the Sauce: In a small bowl, create a cornstarch slurry by mixing the cornstarch with 2 tablespoons of water until smooth. Slowly stir this slurry into the simmering peach sauce. Continue to cook for an additional 2-3 minutes, or until the sauce reaches your desired thickness. Once done, remove from heat and set aside.

        Cook the Tofu: Heat the olive oil in a large skillet over medium-high heat. Carefully add the tofu slabs to the skillet. Cook for about 4-5 minutes on each side, or until the tofu is golden brown and crispy.

          Glaze the Tofu: Once the tofu is cooked, pour the prepared peach glaze over the tofu in the skillet. Gently flip the tofu slices to ensure each piece is thoroughly coated. Let the tofu simmer in the glaze for another 2 minutes, allowing the flavors to combine and absorb.
