2 cloves garlic, finely minced

Sea salt and freshly ground black pepper, to taste

1 tablespoon freshly chopped parsley (for garnish)

Optional: 1 teaspoon sesame seeds (for garnish)

Preheat the Oven: Set your oven to 425°F (220°C) to ensure it’s hot enough for roasting.

    Prepare the Carrots: Thoroughly rinse the rainbow carrots under cold water and remove their skins using a vegetable peeler. For larger carrots, slice them lengthwise or into uniform sticks to promote even cooking throughout.

      Mix the Marinade: In a spacious mixing bowl, combine the extra virgin olive oil, balsamic vinegar, honey, minced garlic, thyme, sea salt, and black pepper. Whisk the mixture until well-blended, creating a flavorful marinade.
