Ingredients

For the Salmon:

1 lb salmon fillet, skin removed

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

For the Blueberry Slaw:

2 cups shredded green cabbage

1 cup shredded purple cabbage

1 cup fresh blueberries, rinsed and drained

1/4 cup chopped fresh cilantro

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper, to taste

For Serving:

8 small corn or flour tortillas

Lime wedges, for garnish

Instructions

Prepare the Salmon Marinade: In a small mixing bowl, combine olive oil, lime juice, chili powder, smoked paprika, salt, and black pepper. Whisk until well blended. Coat the salmon fillet on all sides with the marinade. Allow it to marinate for 15-20 minutes at room temperature to absorb the flavors.

Make the Blueberry Slaw: In a large mixing bowl, combine the shredded green cabbage, shredded purple cabbage, fresh blueberries, and chopped cilantro. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth. Pour the dressing over the cabbage and blueberry mixture. Toss gently until all ingredients are well coated. Cover and refrigerate the slaw while you cook the salmon, allowing the flavors to meld.

Cook the Salmon: Preheat your grill or cast-iron skillet over medium-high heat. Once hot, place the marinated salmon on the grill or skillet. Cook for about 3-4 minutes on each side, or until the salmon flakes easily with a fork and is opaque throughout. Remove from heat and let it cool slightly before using a fork to flake it into bite-sized pieces.

Warm the Tortillas: Heat your tortillas by placing them on the hot grill or skillet for about 30 seconds on each side, or until they're warmed through and have slight char marks. This enhances their flavor and makes them pliable.

Assemble the Tacos: On each warmed tortilla, place a generous portion of the flaked salmon. Top it off with a hearty scoop of the blueberry slaw, letting some of the blueberries peek out for visual appeal. Garnish with lime wedges on the side.

Serve and Enjoy: Arrange your filled tacos on a serving platter. Squeeze fresh lime juice over the tops for an added burst of flavor. Serve immediately while warm for the best texture and taste.
