1 lb (450g) potato gnocchi (store-bought or homemade)

1/2 cup sun-dried tomatoes in oil, drained and chopped

1/2 cup freshly grated Parmesan cheese

1/4 cup fresh basil, finely chopped

3 cloves garlic, minced

1/4 cup extra virgin olive oil

1/2 tsp red pepper flakes (optional for heat)

Salt and freshly ground black pepper, to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Gnocchi: Bring a large pot of salted water to a rolling boil. Once boiling, carefully add the gnocchi. Cook them until they float to the surface, which will take about 2-3 minutes. Once they float, use a slotted spoon to transfer the gnocchi to a bowl. Don’t forget to reserve about 1/2 cup of the pasta water before draining.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute, stirring constantly, until the garlic is fragrant but not browned.

      Incorporate Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes. Cook for an additional 2-3 minutes, allowing the tomatoes to soften and their flavors to blend with the garlic.

        Combine Gnocchi: Reduce the heat to low and carefully add the cooked gnocchi to the skillet. Gently toss to coat the gnocchi in the aromatic olive oil and tomato mixture. If the dish appears dry, gradually stir in some of the reserved pasta water until the consistency is just right.

          Finish with Cheese and Basil: Sprinkle the grated Parmesan cheese and chopped fresh basil over the gnocchi in the skillet. Toss everything together until the cheese melts and forms a creamy, flavorful coating around the gnocchi. Season to taste with salt and freshly ground black pepper.
