1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup assorted bell peppers (red, yellow, or green), thinly sliced

1 cup zucchini, sliced into rounds

1 cup corn (can be fresh, frozen, or canned)

1 cup black beans, drained and thoroughly rinsed

2 tablespoons olive oil

1 tablespoon taco seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, finely chopped (for garnish)

Shredded cheese (optional, for a cheesy finish)

Instructions
 

Preheat the Oven or Grill: Set your oven to preheat at 400°F (200°C). If using a grill, heat it to medium-high.

    Prepare the Chicken and Vegetables: In a large mixing bowl, combine the diced chicken, sliced bell peppers, rounds of zucchini, corn, and rinsed black beans. Mix gently to incorporate the ingredients.

      Season the Mixture: Drizzle the olive oil over the combined chicken and veggies. Add the taco seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Squeeze the juice of one lime over the mixture and toss until everything is evenly coated and flavorful.

        Prepare the Foil Packs: Cut four large pieces of aluminum foil, approximately 12x18 inches each. Evenly distribute the chicken and vegetable mixture among the center of each foil sheet. Fold the sides upwards, creating packets, and ensure they are sealed tightly to lock in moisture during cooking.
