1 lb (450g) ground beef (or chicken)

1/2 cup breadcrumbs

1/4 cup onion, finely chopped

2 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce

1 tablespoon sesame oil

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh cilantro, chopped (optional)

For the Sticky Ginger Glaze:

1/4 cup soy sauce

1/4 cup honey

1 tablespoon fresh ginger, grated

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust based on heat preference)

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

For the Rice:

1 cup jasmine rice

2 cups water

1 teaspoon salt

For Garnish:

Chopped green onions

Sesame seeds

Additional cilantro leaves

Prepare the Meatballs:

    - In a large mixing bowl, combine the ground beef (or chicken), breadcrumbs, finely chopped onion, minced garlic, grated ginger, soy sauce, sesame oil, egg, salt, black pepper, and cilantro if desired.

      - Mix all the ingredients thoroughly until the mixture is well combined. Using your hands, shape the mixture into small meatballs, approximately 1 inch in diameter.

        Cook the Meatballs:

          - Heat a large skillet over medium heat and drizzle in some sesame oil to coat the bottom.

            - Add the meatballs in batches without overcrowding the pan, and cook until they are browned on all sides, about 5-7 minutes. Once cooked, remove the meatballs from the skillet and set them aside on a plate.

                - In the same skillet, add the soy sauce, honey, grated ginger, rice vinegar, and red pepper flakes. Stir the mixture and bring it to a simmer over medium heat.

                            - Once boiling, reduce the heat to low, cover with a lid, and let the rice simmer for 15 minutes. After 15 minutes, remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.

                              Serve:

                                - On each plate, create a bed of fluffy jasmine rice and generously top it with the sticky ginger glazed meatballs. Drizzle any remaining delicious glaze from the skillet over the meatballs for extra flavor.
