1 lb (450g) boneless, skinless chicken thighs

1 tablespoon olive oil

Salt and black pepper, to taste

3 cloves garlic, minced

Zest of 1 medium orange

1 cup freshly squeezed orange juice (approximately 2-3 medium oranges)

1/4 cup soy sauce (low-sodium preferred)

1/4 cup honey

1 tablespoon rice vinegar

1 teaspoon freshly grated ginger

1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

1/4 cup chopped green onions (for garnish)

Sesame seeds (for garnish)

Prep the Chicken: Trim any visible fat from the chicken thighs and pat them dry with paper towels. Evenly season both sides of the chicken thighs with salt and freshly ground black pepper to enhance flavor.

    Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken thighs in a single layer. Sear them for about 5-6 minutes per side, or until they develop a golden-brown crust and are cooked through (internal temperature should reach 165°F / 74°C). Once done, remove the chicken from the skillet and set aside on a plate.

      Make the Glaze: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for approximately 30 seconds, stirring frequently, until fragrant but not burned. Stir in the grated orange zest, fresh orange juice, soy sauce, honey, rice vinegar, and ginger. Mix everything together well.

        Simmer the Sauce: Increase the heat slightly to bring the sauce to a gentle boil. Allow it to simmer for about 5-7 minutes to reduce and concentrate the flavors. If you desire a thicker glaze, add the cornstarch-water mixture and cook for an additional 1-2 minutes, stirring continuously until the sauce thickens to your liking.
