Sweet Corn & Cheddar Stuffed Zucchini

4 medium zucchinis

1 cup sweet corn (can be fresh or frozen)

1 cup shredded sharp cheddar cheese

1/2 cup cooked quinoa (or substitute with rice)

1/2 small onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped (or substitute with parsley)

1 tsp ground cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

1 tbsp olive oil

1/4 cup breadcrumbs (optional, for a crunchy topping)

Extra shredded cheddar cheese for topping (optional)

Instructions
 

Prepare the Zucchini:

    Preheat your oven to 375°F (190°C). Carefully slice each zucchini in half lengthwise, then use a small spoon or melon baller to scoop out the seeds and flesh, creating a hollow cavity for the filling. Place the hollowed zucchini halves cut-side up on a baking sheet.

      Cook the Filling:

        Heat the olive oil in a skillet over medium heat. Add the finely chopped onion and sauté until it turns translucent, which should take about 3-4 minutes. Stir in the minced garlic and continue cooking for an additional minute, until the garlic becomes fragrant.

          Combine Ingredients:

            In a large mixing bowl, combine the sautéed onion and garlic with the sweet corn, cooked quinoa (or rice), shredded cheddar cheese, chopped cilantro (or parsley), ground cumin, smoked paprika, and a pinch of salt and pepper. Stir well until all the ingredients are fully incorporated.

              Stuff the Zucchini:

                Spoon the corn and cheese filling generously into each hollow zucchini half. Press down lightly to pack the mixture in tightly. For added flavor and crunch, sprinkle extra shredded cheese and breadcrumbs over the top of each stuffed zucchini if desired.

                  Bake the Zucchini:
